New specialty bistro The Butcher’s Block by Dario will debut aboard Princess’ newest cruise ship.
A new collaboration between Princess Cruises and the most famous butcher in the world, Dario Cecchini, will be marked by a shared passion for tradition, flavor, and a love of celebration. The Butcher’s Block by Dario, a new specialty bistro, will launch in February 2024 aboard the upcoming Sun Princess.
Cecchini is known throughout the world for his butcher shop and restaurants located in the Tuscan village of Panzano, Italy. He has been in the business for over 48 years, drawing on skills passed down through eight generations from father to son.
Featured on the Netflix series Chef’s Table, Cecchini is renowned for restoring respect to butchering by using all cuts of meat. He often uses his grandmother’s recipes that he fell in love with as a young boy.
The Butcher’s Block by Dario will be a Sun Princess exclusive
The Butcher’s Block by Dario, located on Deck 9 of the new Sun Princess, will be an impromptu experience featuring a large family-style shared table. This specialty dining experience promises to grill up perfectly prepared beef and steak, including Cecchini’s signature cuts.
Princess’ signature steakhouse, Crown Grill, will also feature a refined upscale menu designed by Cecchini. The new menu will feature Bistecca Alla Fiorentina, a distinctive Florentine steak prepared with the bone, sourced directly from the prestigious Antica Macelleria Cecchini butcher shop in Panzano.
“Princess’ culinary offerings embody a rich Italian heritage, uniting a shared passion for family recipes, vibrant social dining, and a love of celebrating each day of life,” Cecchini said in a press release.
“My life as an artesian butcher holds deep significance because I hold profound respect for the gift of the animal and ensure that shines through when guests enjoy my new restaurant and delectable menus sailing the world on the beautiful Sun Princess,” he continued.
Dining aboard Sun Princess
Aboard Sun Princess, cruisers will be treated to 29 new and signature dining and lounge options. The ship’s three-story main dining room, Horizons, has been designed to elevate the traditional main dining experience with stunning wake views, natural light, and artistic sculptures.
Along with Butcher’s Block by Dario and new menu options at Crown Grill, specialty restaurants on Sun Princess will include Kai Sushi, Sabatini’s Italian Trattoria, the ship’s exclusive Umai Teppanyaki, and The Catch by Rudi, which will offer fresh seafood.
“Princess is dedicated to creating the finest experiences for guests spanning all cultures, tastes and preferences,” said Princess Cruises’ president John Padgett. “From fine dining to casual and from indulgent to healthy, guests will love what the Sun Princess (brings) to the table.”

About Sun Princess
The 175,500-ton, 4,300-guest Sun Princess, which is now being built at the Fincantieri shipyard in Italy, will debut in February 2024. The new ship will provide a wide range of exciting new entertainment and activity options as well as luxe staterooms and suites in a variety of categories.
The ship’s Arena is an evolution of the most technologically advanced Princess Theater design, while The Dome will be a transformational entertainment space inspired by the terraces of Santorini.
